Wonderful Watermelon Salad

This post is probably a few months too late...sort of.  I actually had planned on blogging about this earlier, but I have been on a very busy schedule that I totally forgot about this recipe.  This is a very quick and tasty salad made with watermelon that is at its sweetest.  I actually saw a recipe for this in a summer edition of Australian Gourmet Traveller and knew I had to have a go at it.

My parents have been eating a combination of watermelon and/or grapes with Greek cheeses for as long as I can remember.  My mother would sometimes even have bread with that combination.  Then a few years ago, I noticed the trend for combining watermelon with cheese in a lot of foodie magazines and later in many "trendy" eateries.  It had taken off in a really big way!  This is my "Greek inspired" version of watermelon salad using feta cheese, plump cherry tomatoes and parsley.   It's very refreshing in hot weather and very delicious.  Enjoy!

RECIPE FOR GREEK WATERMELON SALAD

(serves 2)

  • 1/4 of a watermelon cut up into reasonable sized cubes, seeds removed
  • a small container of cherry tomatoes, halved
  • a handful of parsley, roughly torn
  • 100-150 gr of crumbled feta cheese

Arrange all the ingredients on a plate and enjoy!
