Baked Salmon with a Herbed Crust

As I explained yesterday, I’m not really a big seafood eater.  I’m trying to indulge in more seafood in particular the “good variety”.  Salmon is a good choice as it provides a number of essential nutrients and oils.  I also enjoy its meaty texture and find it quite filling.  I wanted to pair the salmon with the fresh flavours of spring so I used a number of fresh herbs and combined them with some panko breadcrumbs and used the mixture as a crust.  I basically used some flat leaf parsley, some basil, the breadcrumbs, the grated zest of one lemon and a little oil.  Whizz it in the food processor and apply it on top of your salmon fillet.  Pop it in a preheated 180 deg C oven and let it bake for 15 mins.  Very easy and satisfying indeed.

I served the baked salmon with some of the crushed broad bean and pea salad I posted about yesterday.  Just a note about that post.  I know that broad beans are fava but I somehow forgot to include that when I wrote it up!  Oops!  I’ve actually been a little hectic lately.  I’ve just returned from Oktoberfest (pics soon!) and had a few personal and professional woes to work out in the last couple of days.  Mistakes happen.  Also I was trying to throw a little sarcasm at myself at the end of the post and I see it didn’t really come across that way.  Upon re reading it, it just sounds stupid!  Ok, I’m rambling now.  See ya!  Hope you all enjoy your weekend.

    Oktoberfeast is all over the world now. Germans invented a fantastic Beer event! I’m celebrating it at home and in small doses… should do something with my tummy or I will look like winnie Pooh soon ;D

  5. I love salmon but I haven’t had it in the longest time as I like to buy wild salmon and so much of what is in the market now is farm raised. I should really read up on the differences, as many people are for farm raised and others are against and I still haven’t gotten all the facts straight.
    Yours looks delicious! And it always makes for such a quick meal as it needs little to enhance its flavor.


  6. I adore salmon, Peter, but usually don’t order it because people tend to overcook it and it gets too dry. I love this version, though - that crust looks delicious!


  7. I made some salmon the other day. We get so much here in the Pacific Northwest, and it’s good and everything, but it’s really great to see it used another way once in awhile. You’ve done exactly that.

    Eat more seafood!


  8. Pete, at least you’re endeavouring to add more seafood to your diet. Salmon’s a great start and you’ve handled it well and with respect…minimal ingredients and you’re not hiding it’s flavour.

    The herb/panko crust is one I will steal! lol

  11. I think I missed your last post. I’ll have to read it. Sorry about the troubles you’re having. Oktoberfest sounds like fun though.

    The salmon sounds great. I think the crunchy topping would no nicely with the fish. I saw a Food Network guy make something similar to this, and he put it on a bed or ratatouille.


  12. The salmon on the blue background is exquisite. Salmon is my very favorite fish. I order the wild salmon from Alaska and haven’t been disappointed. The peas are perfect with it.

  14. aaaahhh broad beans are still flowering in our garden. yum! i like salmon, but will tend not to go for more in a short time afterwards. lovely and simple, p.


  15. yum! I absolutely adore seafood but don’t really eat salmon that much for some reason - I love the idea of the crust though as I think salmon really needs something quite strong. The broad bean and pea salad also looks gorgeous - it makes me miss summer!


  16. Always looking for another way to cook salmon. My husband is poster boy for salmon and oatmeal as method of lowering cholesterol. When he had a bad reaction to the medication he was taking, his doctor said, “Try salmon twice a week and oatmeal for breakfast every morning.” His cholesterol is now lower than it was on medication.

    But whereas I used to always order salmon when we ate out, I now yearn for new ways to prepare it…and I’ve got dozens!!!
