A lot of friends ask me whether I eat all the food I cook on the blog. To that I always answer a resounding “yes”! I’m not sure what they think I do with it!
Another question I get often, is if the food I cook reflects my diet/lifestyle. I think what they really mean is “do you eat all those pavlovas you cook?”. LOL
When it comes to sweets/cakes I of course eat it to make sure it’s ok, however the rest gets donated to neighbours and friends. (there is no way I’d be able to keep my trim physique!)
I love cooking (and eating!) but I try to limit everything and keep it all in balance.
Take the gazpacho soup I made recently. There was no way I was going to gobble all that down. It would’ve taken me a whole week! Instead I gave it to a friend who has a huge love for cold soups.
Sometimes I plan my creations, other times they come by accident.
This Cajun-style salmon souvlaki I whipped up earlier today, came about because I was doing a mini clean up of the fridge.
“Oops!…there’s two more fillets of salmon still left” I thought. I also notice some roasted peppers staring from the back.
So with a little Cajun seasoning, a few spare skewers lying in my draw a new souvlaki was born. I accompanied this with a tomato and spring onion salad and lunch was promptly served! (it also gave me an opportunity to show off my new darker dramatic backdrops).
These salmon souvlaki were wonderful. The Cajun spices worked wonders against the juicy flesh. The only other thing I did was drizzle a little olive oil with a squeeze of lime juice on top. Tangy, summer-y, refreshing and tasty! (and yes I ate them all with great gusto!).
CAJUN STYLE SALMON SOUVLAKI RECIPE
I won’t be giving out any quantities…adjust those to the number of people you’re serving. N.B. The salmon cubes cook really quickly. A few mins on each side in a grill pan or bbq is sufficient. Anything more and they become dry. Also if you plan on using raw vegetables, perhaps think about cooking them beforehand, otherwise they won’t cook along with the salmon.
- salmon fillets, cubed
- Cajun spices or herbs of your choice
- roasted vegetables (good quality ones in a jar are fine)
- lemon or lime juice
- cracked black pepper
- a drizzle of olive oil
- Coat the salmon cubes in Cajun spices and thread on pre soaked bamboo skewers, alternating with roasted peppers or vegetable of choice
- Cook for two mins on each side
- Serve witha drizzle of olive oil, cracked pepper and a good squeeze of lime juice.

Love salmon and would eat it gladly. Great idea to make a souvlaki out of salmon. I never tried it up to now because I thought it would flake easily.

Photos terrific as always, Peter. Cajun spices is not something I ever think of using in my cooking. I don’t seem to be attracted to them on menus either. Perhaps I’m in rut and need to broaden the horizons. Thanks for bringing that to my attention.

Cajun seasoning is so good for spicing up grilled meats and fish isn’t it. Love the photos of the skewered salmon. So far I seem to be eating most of what I am making – maybe that explains the kg’s!
Of course I eat the food I cook on my blog…and quickly too! The food blogger’s dilemma…eating cold food because we take 100 photos of a dish first! Salmon souvlaki is a winner – love Cajun seasoning too!

Hi Peter! I know that I’ve been one of the lucky recipients of your baked sweets – remember the Greek cookies? Both my Mom and I loved them! Your friends are so lucky to have such a great and generous baker/cook! As for this souvlaki – I was reading your blog and Daniel couldn’t help but stare at the dish – he asked me to make it for him – as he is trying to lose weight!

I’m not sure if my yiayia would say about these! I have some salmon in the fridge however and need to do something with it tomorrow, so, I will give this a whirl and see what family has to say!
Like Anh, I like my salmon raw. Which is why that marinated salmon photo calls out to me much more than the cooked ones!
I serve salmon all the time, never occurs to me to put it on a skewer. It’s a great presentation. Cajun spice is always welcome here…

Ah yes, lol.. I get asked that question a lot too. Mostly by my dad who is complaining why I did not bring something nice and tasty when visiting. But I do have to get better at the giving away part or else I will never get a slim physique! lol… Now those salmon skewers would work perfectly for me. Love them. love your dramatic backdrop too!

To find another beautiful way to eat salmon is such a treat. We serve salmon often to guests and this opens us to a new way maybe even to mix with some skewered beef and give our guests choices. Love it.
