Looks yummy. I do this type of curry quite often. Two suggestions to make the whole thing quick, easy and just plain delicious. Fiji Markets on King Street Newtown, southern end do there own blend of curry powders and they are great, Mild and HOT. This is the most brilliant shop, even have lots of rice selections and fresh roti in the fridge. I always have a supply of small cans of Lite coconut milk in the pantry so that I can add one can and not end up throwing the other half out 5 days later, Coles & Woolies sell them and probably most Asian supply shops.
