P.L.T.-Prawn, Lettuce and Tomato Roll

It’s been a few weeks!  A busy few weeks.  I had a bit of a break and went down to the South Coast of NSW for a few days with a group of friends.  I’ll be covering that in a future post.  I also managed to get down to Tasmania for a week but that was strictly business-helping out a friend on a project.  I was also in the States for a few weeks and managed to see all sorts of extreme weather.  Major snow on the East Coast and continuous rain in Southern California.  I finally make it to Sydney only to discover more rain.  It’s so humid and tropical here at the moment.  I know I repeat myself all the time but man is it sticky!  Taking a walk makes me break out in a complete sweat!

There was no way I could be bothered cooking anything in this stifling heat.  When I spotted some beautiful “cooked” prawns at the market the other day, I knew I wanted them.  I enjoyed them “au natural” with a light squeeze of lemon juice and even in a quick salad with some lettuce, Greek oregano and olive oil.  Nothing fancy really.  However, for something a little more substantial and satisfying I made a sandwich by adding a dill mayonnaise to the prawns, some crispy, cool cos lettuce and some juicy tomatoes that are everywhere at the moment.  I chose a chewy ciabatta roll to encase the filling and it was perfect.  It was the kind of sandwich where you take a bite and the mayo dribbles down the side of your mouth and covers your fingers.  Accompanied by a cold glass of beer-and I was set!

RECIPE FOR PRAWN LETTUCE & TOMATO ROLL

(N.B. The “secret: here lies in the quality of the mayonnaise and the herbs.  I used a good store bought one but if you feel adventurous go ahead and make your own.  You may also wish to substitute other herbs if you prefer)

  • A big handful of cooked prawns
  • 2 tablespoons of good quality mayonnaise-I used  ”Thomy” brand
  • 1 teaspoon of chopped dill
  • 1 teaspoon of chopped parsley
  • A good squeeze of lemon juice
  • salt and pepper to taste
  • Cos lettuce that has been washed, dried and cooled in the fridge
  • 1 tomato thickly sliced
  • Ciabatta style rolls
  • chopped dill and chives to garnish
  1. Combine the mayo, herbs , lemon juice, salt and pepper in a bowl.
  2. Add the prawns and stir thoroughly.
  3. Slice your ciabatta roll in half and begin with cos lettuce, then the tomatoes and lastly the prawns and mayo mixture.
  4. Garnish with extra dill and chives if desired.
  5. Serve with a cold beer!

Pete, you’re killing me…shrimps drenched in Mayo just before Lent? I’ll fix you up! lol

Another thing to do to heighten this dish is poach your own shrimp.

Kali Sarakosti. That’s a really gourmet sandwich. How about instead of mayo adding some white taramosalata to make this sandwich nistisimo (???) I think I like the idea.

Finding freshly cooked shrimp at the market is one of the many joys if living in Australia where seafood is abundantly available. This is perect for a hot day. Now while we have experienced a mild and snowless winter here in the interior of BC, I would love to be sunning myself at the beach.

Simple and Delicious! That’s how All it should be, Peter :D . The picture looks stunning and makes me want to clone it in my own kitchen…. too bad I’m on diet and beer and bread are forbiden for now… ahhhahghghghghhgh.
I hate sticky weather, but it’s being so cold and rainny here this winter that I wouldn’t mind to change it for some tropical heat :D

Ah! That explains your absence! welcome back. Prawns and *good-quality* mayo are such a great classic combination, but mayo is good on everything isn’t it? Too bad it is so fattening!

Gorgeous. Give me prawns and mayo any day, and I’m a happy woman. But, make it into a sandwich, and I don’t think I can resist. This sandwich says “summer” to me. Can’t wait for the warmer weather to throw itself upon this side of the world!

Nice looking sandwich. For something so simple, I would agree that getting good quality ingredients, such as the mayo, is key.

Hey Peter, welcome back! You are a busy man traveling all over the world, that must be nice! In hot days I also like to have simple, yet delicious recipes. I love the ciabatta roll. It looks like the perfect “wrapping” for the delicious filling.

This a great twist, though sandwiches are versatile this is a new thing. This is the first time i encountered prawns on a sandwich, but i bet it tastes good. Thanks for this!

Love the fresh play on BLTs – looks delicious. My favorite is a BLA – bacon, lettuce, and apple – perfect for those of us in cooler climes.
