Looks great - I wonder if it's OK to leave the carrots unpeeled?

Awesome. Did add some pepper flakes though for some extra heat. Mine was not so smooth though, but more ... rustic (just the way I like it). The red onion I used made it a bit darker as well.

Actually, let me show you :)

tried and true!
at harvest, i discovered a bag of store bought carrots that really needed to be used up, so i was on a quest to find a roasted carrot soup ... and here you were!
i probably tripled your recipe and found it to be very tasty indeed ...
at first taste we wondered if i had put too much honey in, but the second and remaining spoonfuls were just delicious ...
my husband preferred it 'straight up', and i added a dollop of sour cream as i didn't have cream proper ...
and, i did have fresh cilantro leaves from the garden to add which was just the perfect touch!
thank you so much for sharing your recipe ... i am passing it along today on my blog ~ pop by if you get a chance ~
cheers!

haven't made carrot soup, but had done carrot pudding, indian style. pretty rich, i suppose. i am curious about the taste of roasted vegetables and then pureed into a soup. hmmm... must try it one day. it's getting hotter in here. how's Sydney?

I've never had carrot soup before, but oh-boy does it sound good.

I hadn't blogged in about a week and a half, and I was starting to feel like a bum. It's kind of nice taking a break, isn't it?
