I m totally in love with rosewater, also used to be a bit nervous of gelatine until i found a very old book, 70's, i think, seemed to be all the rage then, read up about it and have learnt to play, it helps me add a bit of "backbone" to creams i use as a garnish in soups and all sorts of fun things. I made my first panna cotta a couple of days back, and they too were great, make friends with gelatine and have fun. take care great site, wonderful insights.
