Summer Galette

I hope everyone saw the new year in well.  Mine was a little quiet spent celebrating with friends, eating and drinking a few bottles of champagne.  Sydney put on it’s usual fireworks display spending up to $5 million for the spectacle.  Anyway, I’ve been visiting a few of my regular blogs and been reading a lot of the goals some of you have set out for yourselves.  It’s always interesting to read what others plan on doing.  I just plan on staying healthy and avoiding the dentist again!  Oh!  and I’ve launched my online portfolio for my food photography/styling.  Wish me luck!  After a few attempts I’ve sorted it all out and with the help of some wonderful new online friends, namely Billy from ” A Table for Two“,  I’ve gained some valuable feedback about what works and doesn’t work!  If you would like to check it out please do so here.

Anyway, I’ve still been going crazy indulging in a lot of stone fruit.  This time my haul included apricots, peaches and mangoes.  Also whilst at the market I couldn’t resist on stocking up on limes.  They were plentiful and cheap so I grabbed a few. It’s the first time in ages I’ve seen them reasonably priced!

There is only so many fruits one can eat, so I decided to make a few rustic pies or galettes to take to a friends gathering.  (I have been to so many bbq’s the last few days!)  Again, I wanted this to be quick and easy as I didn’t want to fuss about in the kitchen too long.  I used store bought puff pastry and on that I spread some home made blackberry jam (recipe in a few days…so easy!).  I had previously cut up my stone fruit (apricots, peaches and mangoes) and had macerated them with the juice of one lime and a few tablespoons of brown sugar. I placed them in the centre of my square sheet of pastry, folded the edges to the centre and made little parcels, ensuring the centre wasn’t sealed.  I brushed them with some egg wash and heated them in a 180 deg C oven for about half an hour.  When I took them to my friends place all I did was wrap them in some foil to re heat them, but you could have easily ate them at room temperature.  They were so aromatic and the apricot really dominated!  Just remember these are quite rustic in appearance and be careful as you cut them up.  Enjoy dear friends!

Peter, I am looking forward to summer through your shots at the moment…love the first one (stripes + colors = winner) but the last one with all the fruit juices is great…i’mmm craving summer fruits now!

Peter, I love stone fruits (made something with plums on the weekend, Donna Hay’s recipe). The galettes look so fresh, just what I needed right now.
Our New Year was very quiet, just Joao and me, but I loved it. Good food, good wine, great company. There’s nothing else I’d ask for. :D

Mmm I love galettes. I definitely agree with Jenn – you are fabulous with photography and food styling. I think you need to call up Gourmet or Bon Apetit stat! :)

You guys sure have a knack for pyrotechnics down there. I was there for new years 2000 and don’t think I’ve ever seen a spectacle quite like that.

Hey Peter! I am glad to hear you had a nice New Year. I also spent it with friends and had a little bit too much to drink, but what are you gonna do, it is New Year’s, right? One of the few reasons I love summer is the great variety of fruit around. I can’t wait to have all that again :)

Hi Peter. Your site is looking amazing! Having dropped out of the blogger sphere for quite some time now it’s lovely to visit your site and see all that you’ve done. I’m hoping to start writing again soon. I’ve put a few things together but want to wait until I can give it a proper go…too many half-hearted restarts and little to show for it in the past.
