Arakas me Patates (Braised peas and potatoes)

Brrrrr…” That icy wind blowing outside is showing no mercy! I’m feeling very content in my little apartment all rugged up with a cup of tea. The best part of winter for me, is being able to cook up comfort foods. Nourishing, warm “soothe the soul” kinda foods. Comfort food doesn’t always have to equal “stodge” though. Nor does it involve a journey

Cheese Soufflé

by Peter G June 2, 2011 Recipes

Time for another “retro” dish to here at Souvlaki For The Soul. In all its “puffy glory” I present the cheese soufflé. I couldn’t resist. After reading an article in yesterday’s Sydney Morning Herald “Good Living” magazine I just had to make it. And to be honest, it’s been a fair few years since I had a go at making a soufflé. Like my poached pears this dish

Poached Pears with Chocolate and Muscat

As I stare outside my window it’s pouring. Raining “cats and dogs” or any other cliche you can think of!  It’s “sit in front of the heater, with pajamas and a glass of red/hot chocolate” kind of weather. (am I the only one who does this? LOL!). A quick look in the pantry revelas a bag of Corella pears.  Oops!  Where did these come from?  I want a dessert tonight [...]

Cauliflower Soup

by Peter G August 22, 2010 Recipes
Thumbnail image for Cauliflower Soup

I just realised that in my three and half years of blogging, I have never featured a recipe for cauliflower on Souvlaki For The Soul!  Shock!  Horror!  It’s a vegetable I have not really experimented with much over the years.  It’s not that I

Cavolo Nero

Thumbnail image for Cavolo Nero

When I first heard the name Cavolo Nero I honestly thought somebody was talking about an Italian opera singer.  Well, I was partly right.  Cavolo Nero is of Italian origin and mostly found in the Tuscany region.  It has dark green leaves that are almost black in colour and each leaf has a tough central stalk.  It was those stalks that caused me a lot issues

Lentil Soup-”Fakes”

I love lentils!  I’m thinking of getting that printed on a t-shirt and telling the whole world.  Ok. Maybe that’s a little over the top but what’s not to love about this legume?  It’s healthy, full of fibre and definitely fills

Carrot and Dill Mash

Just when I thought the weather had cooled down we get another batch of ugly humidity here in Sydney!  I made this carrot and dill mash recently when I was experimenting for an autumn dinner party.  I sometimes get tired of serving the usual

Thumbnail image for Mandarins

It’s been a fairly hectic number of weeks and I really have had no time to post.  I’ m trying to catch up and hopefully I’ll get there!  Anyway, you’re probably wondering what mandarins have got to do with anything?  Well not much!  I’m just ejoying them at the moment as they are plentiful.  And I don’t have a recipe for them…(but I do have a recipe coming up for [...]

Parsnip Mash with Parmesan and Olive Oil

by Peter G July 9, 2009 Recipes
Thumbnail image for Parsnip Mash with Parmesan and Olive Oil

I personally think parsnips get a bad rap.   They are often seen as a boring, “uninspiring” root vegetable.  Maybe this vegetable needs an image make over or dare I say an”extreme makeover’?  It’s closest relative, the carrot, enjoys our undivided attention in many dishes. Well I’m here to tell you that things are about to change for the humble parsnip. I want to give it the attention it rightly [...]

Pumpkin and Lentil Soup

by Peter G July 3, 2009 Recipes
Thumbnail image for Pumpkin and Lentil Soup

It’s blowing outside.  Freezing actually! It’s cold. And all I feel like doing is making a batch of soup and enjoying it with some sourdough rye bread.  I used some butternut pumpkin (squash) and thickened it with some red lentils.  It’s spiced up with some fresh chili, garam masala and ground cumin.  Enjoy your weekend everybody! RECIPE FOR PUMPKIN SOUP WITH LENTILS 1 diced red onion 1 small freshly chopped [...]

Baked Beef Ragu

With the colder weather in full swing I’ve been further experimenting with slow braises and casseroles.  The above dish is a result from playing around in the kitchen.  As I stated in my beef stifado recipe I like to use chuck steak in my casserole cooking.  It’s a cheap cut of meat, with a good amount of fat that melts as it is slowly cooked.  I buy it in big [...]

Giouvarlakia Revisited

by Peter G June 17, 2009 Greek Food
Thumbnail image for Giouvarlakia Revisited

I’ve decided to redo giouvarlakia this winter.  I’ve blogged about giouvarlakia before and you can find my recipe here.  I love the “heartiness” of this dish and I can eat them non stop. They definitely warm up the insides.  However, in my “extreme makeover” (ok, maybe not that extreme) I add a bunch of chopped silverbeet or swiss chard and some brown lentils to cook with the stock created by [...]

Beef Stifado

by Peter G June 11, 2009 Greek Food
Thumbnail image for Beef Stifado

Cooler weather demands comfort food.  And lots of red wine!  That’s my motto and I’m sticking to it! Seriously though, that’s probably the best part about winter.  The stews, braises and casseroles. This time around I wanted to attempt that classic Greek dish called “stifado“.  It’s a one pot aromatic stew utilising baby onions, red wine vinegar and cinnamon to a name a few ingredients.  This dish traditionally uses wild [...]

Adventures With an Earth Oven

I was visiting my brother and his family in my hometown of Melbourne last week and had the chance to stay with them for a few days.  They live on the outskirts of the city and pretty much try to maintain a self sustaining lifestyle.  They grow everything in their back garden.  Broccoli, garlic, herbs, tomatoes (when in season) etc… Everything!  You get the idea…leaves my own farmers market to [...]

I Love Lamb

by Peter G August 9, 2008 Greek Food
Thumbnail image for I Love Lamb

I will apologise to any vegetarians now if you find this post offensive.  Or maybe not!  My name is Peter and I’m a lamboholic!  Yep! That’s right.  It’s an addiction. It’s become so expensive to buy this stuff right now that I couldn’t resist these beautiful lamb cutlets when I saw them at the butchers the other day.  Priced at $2.50 each I was warned before I made my purchase.  [...]
