Wonderful Watermelon Salad

Greek watermelon salad with feta

This post is probably a few months too late…sort of.  I actually had planned on blogging about this earlier, but I have been on a very busy schedule that I totally forgot about this recipe.  This is a very quick and tasty salad made with watermelon that is at its sweetest.  I actually saw a recipe for this in a summer edition of Australian Gourmet Traveller and knew I had to have a go at it.

My parents have been eating a combination of watermelon and/or grapes with Greek cheeses for as long as I can remember.  My mother would sometimes even have bread with that combination.  Then a few years ago, I noticed the trend for combining watermelon with cheese in a lot of foodie magazines and later in many “trendy” eateries.  It had taken off in a really big way!  This is my “Greek inspired” version of watermelon salad using feta cheese, plump cherry tomatoes and parsley.   It’s very refreshing in hot weather and very delicious.  Enjoy!

RECIPE FOR GREEK WATERMELON SALAD

(serves 2)

  • 1/4 of a watermelon cut up into reasonable sized cubes, seeds removed
  • a small container of cherry tomatoes, halved
  • a handful of parsley, roughly torn
  • 100-150 gr of crumbled feta cheese

Arrange all the ingredients on a plate and enjoy!

This looks wonderful! It’s strangely timely for me. Since I was a kid my uncle has bought a watermelon to our Easter celebration claiming it as the giant Easter egg for the year. I have to snag some of the leftovers to try this.

i LOVE watermelon and feta (and grapes with graviera)
we often eat paximadi rusks with this kind of meal in the summer
absolutely love it – summer is just round the corner for us!

This is such a lovely salad. I make a slight version of it without the tomatoes, with mint instead of parsley. I think it’s a pretty classic recipe that a girlfriend turned me on to one picnic summer ago.

You’re almost ready for squashes, mushrooms and casseroles, aren’t you? :D

It looks so “summery” It doesn’t matter that the post is “old”. It is just perfect for our part of the world since we can’t wait for the summer to start. My mom also loves cheese in her fruit salads. Isn’t it funny that what other people have eaten in other parts of the world for generations is now trendy in richer countries? I always find that amusing :-p

I’ve always combined watermelon with halloumi but this year I shall definitely try it with feta. Lovely shot of the salad.

Wow, reminds me of summer in Greece. I remember eating this after beach time. Works well with peponi also of course, cantaloupe melon that is :P Important though to use real feta made of goat cheese that is rich and creamy, the cow feta just isnt good compared to the real stuff. Difference is even bigger than between buffala mozzarella and the cowmilk stuff.. thanks for this great post! Summer can come in Europe!

That’s a very interesting combination to have watermelon with tomatoes… The feta just sounds lovely in it as well and I’d be curious to find out if I like the tomatoe/watermelon combo. Not something I would have thought of trying. Love the fresh and bright photo here too Peter!

we eat white cheeses (esp feta) all the time w/watermelon (and grapes too)! with pita and some black olives on the side too :-) but I’ve never had tomatoes throwed in, so this makes it a really interesting combination. Also: Peter, your photos are just getting more and more incredible!

Watermelon with feta cheese. What a wonderful idea. I just started purchasing a feta that comes in brine. So fabulous. Now, can’t wait for watermelons.
