Souvlaki For The Soul

1. Heat oil - add diced onions, carrots, celery and stir

2. Add garlic and brown lentils

3. Add water/stock, tomatoes & bay leaves

4. Skim off any impurities that rise to the top - cover & simmer

5. Season with salt & pepper and serve

6. Serve with red wine vinegar and enjoy!
