Yogurt Toast (TikTok Recipe)

Is yogurt toast even a thing? Of course, it is - if you're on TikTok. But, surprisingly, this latest trend is not only delicious but also one that I highly recommend you add to your breakfast recipes.

Ingredients

  • 2 slices brioche (see note 1)
  • 60 grams yogurt (see note 2)
  • 1 egg
  • 2 tablespoons honey (see note 3)
  • 1 teaspoon vanilla
  • ¼ cup blueberries (see note 5)

Instructions

  • Preheat oven or air fryer to 180 deg C (350 F).
  • Take 2 slices of bread and place them on a lined baking sheet. (see note 6)
  • Using the back of a spoon (or a fork), press the bread down to create a well or a "pocket" (this will hold the yogurt custard mixture).
  • In a medium bowl, mix one tablespoon of the honey, vanilla extract, egg and yogurt until smooth.
  • Gently pour or spoon the yogurt/egg mixture onto the bread (ensure it reaches the edges). (see note 7)
  • Top with blueberries or your favourite fruit.
  • Bake for 15 minutes or air fry for 10 minutes until golden brown and the custard has set. (see note 8)
  • Serve immediately drizzled with extra tablespoon of honey and powdered sugar.

Notes

  1. Bread - swap out the brioche for your favourite type of bread (white, wholewheat, seeded, gluten-free etc..). I think a thicker sliced bread works better as it allows to hold the yogurt custard.  
  2. Lower fat and flavoured yogurts also work well.
  3. Honey is my choice of sweetener; however, don't be afraid to change it up and use maple syrup, agave syrup or even a date syrup. Stevia and regular sugar are good options as well.
  4. If you're counting macros, then use the egg whites only. Alternatively, if you like rich flavours, use egg yolk only.
  5. Any fresh berries, fresh or frozen fruit or canned fruit would work well.
  6. Make sure the bread is dry before adding the yogurt custard. This helps prevent the custard from soaking through the bread.
  7. Don't overfill the pockets. Too much liquid makes the bread soggy, and it will overflow, causing a mess!
  8. A toaster oven works just as well as a regular oven or air fryer.
