Fattoush Salad Recipe

A recipe inspired by the Lebanese classic - fattoush salad. This version has the addition of "hot-smoked" salmon paired with an exotic dressing.

Ingredients

FOR THE SALAD:

  • 2 pita bread
  • 1 capsicum finely chopped
  • 250 g cherry tomatoes cut in half
  • 2 cucumbers Lebanese, sliced thinly
  • 4 radishes small ones, thinly sliced
  • 4 spring onions thinly sliced
  • 1 cup flat-leaf parsley finely chopped
  • 1 cup mint finely chopped
  • 250 g smoked salmon "hot-smoked", broken into even pieces

FOR THE DRESSING:

  • ¾ cup olive oil
  • juice of 1 lemon
  • 1-2 tablespoon molasses pomegranate
  • 1 teaspoon sumac
  • 1 pinch salt
  • 1 pinch pepper

Instructions

  • Preheat your oven to 190 deg C and line a baking tray with baking paper.
  • Brush a little olive oil over the pita bread, place on a baking tray and cook for 5-8 mins until the pita bread is crisp. Remove and allow to cool.
  • Add the capsicum, cherry tomatoes, cucumbers, radishes, spring onions, herbs and salmon to a large bowl. Crush the cooled pita bread with your hands and add to the salad ingredients.
  • Whisk the dressing ingredients in a large jug and pour over the salad, toss and serve immediately.
