Using the back of a spoon (or a fork), press the bread down to create a well or a "pocket" (this will hold the yogurt custard mixture).
In a medium bowl, mix one tablespoon of the honey, vanilla extract, egg and yogurt until smooth.
Gently pour or spoon the yogurt/egg mixture onto the bread (ensure it reaches the edges).
Top with blueberries or your favourite fruit.
Bake for 15 minutes or air fry for 10 minutes until golden brown and the custard has set. Serve immediately drizzled with extra honey and powdered sugar.
