What is Yogurt Toast?
Yogurt toast is a new way of eating yogurt that's been trending for the past few weeks. The idea behind it is simple: combine some plain yogurt with an egg to make a custard - add it to your favourite bread and then top with whatever fruit you like. It's very similar to baked French toast. However, I like to think of it as a "French toast recipe on steroids"!

What goes into this recipe
- Bread - I've chosen brioche bread for this recipe. I love its rich flavour and how decadent it is.
- Greek Yogurt - Full fat plain Greek yogurt all the way for me.
- Egg - Medium-sized weighing 60 grams.
- Vanilla Extract - a small amount of vanilla extract adds a nice flavour to the custard.
- Honey - used for drizzling and mixing into the yogurt.
- Blueberries - This is my choice for topping the yogurt toast.
Ingredient notes and substitutions
- Bread - swap out the brioche for your favourite type of bread (white, wholewheat, seeded, gluten-free etc..). I think a thicker sliced bread works better for toast as it allows to hold the yogurt custard.
- Lower fat and flavoured yogurts also work well.
- Honey is my choice of sweetener; however, don't be afraid to change it up and use maple syrup, agave syrup or even a date syrup. Stevia and regular sugar are good options as well.
- If you're counting macros, then use the egg whites only. Alternatively, if you like rich flavours, use egg yolk only.
- Any fresh berries, fresh or frozen fruit or canned fruit would work well.
- Add a scoop of protein powder to the yogurt to make it high protein.
- A tablespoon of peanut butter added to the yogurt or drizzled on top adds a lovely nutty flavour.
- Add one tablespoon of chocolate chips to make the kids happy!
How to make this recipe
- Step 1: Preheat oven or air fryer to 180 deg C (350 F). Take 2 slices of bread and place them on a lined baking sheet.
- Step 2: Using the back of a spoon (or a fork), press the bread down to create a well or a "pocket" (this will hold the yogurt custard mixture).
- Step 3: In a medium bowl, mix one tablespoon of the honey, vanilla extract, egg and yogurt until smooth.
- Step 4: Gently pour or spoon the yogurt/egg mixture onto the bread (ensure it reaches the edges).
- Step 5: Top with blueberries or your favourite fruit.
Step 6: Bake for 15 minutes or air fry for 10 minutes until golden brown and the custard has set. Serve immediately drizzled with extra honey and powdered sugar.
Expert tips
- Make sure the bread is dry before adding the yogurt custard. This helps prevent the custard from soaking through the bread.
- Don't overfill the pockets. Too much liquid makes the bread soggy, and it will overflow, causing a mess!
- A toaster oven works just as well as a regular oven or air fryer.
