Greek Yogurt Strawberry Popsicles

Enjoy these delicious homemade Greek yogurt strawberry popsicles that strike a perfect balance between sweet and refreshing, with a burst of natural berry flavour that store-bought versions can't match.

Equipment

Ingredients

  • 500 g strawberries fresh, cleaned, hulled and chopped (see note 1)
  • 480 g Greek yoghurt full fat preferred (see note 2)
  • 120 g honey (see note 3)

Instructions

  • Clean and hull the strawberries and chop them in half.
  • Combine the berries, yogurt and honey in a blender or food processor.
    500 g strawberries, 480 g Greek yoghurt, 120 g honey
  • Blend all ingredients until smooth.
  • Pour the mixture into popsicle molds and pierce through the sticks (make sure they aren't too deep - you want to be able to hold them!).
  • Freeze for at least 6 hours or overnight.
  • Unmold the strawberry popsicles by running them over warm water, and enjoy!

Notes

  1. Use frozen if you prefer. Ensure to thaw them in the fridge overnight and drain them before using. 
  2. Sub with a lower fat variety - they won't be as creamy though. You can also use dairy-free alternatives such as coconut cream, coconut yogurt (again do a taste test before pouring into molds). 
  3. Sub with maple syrup, agave, monkfruit sweetener or stevia. (again - taste before you pour so you're happy with the sweetness. My best advice is to add a little at a time). 
  4. Blend ingredients thoroughly to avoid ice crystals
  5. Leave some space at the top of the mold for expansion
