cauliflower Cauliflower Soup

I just realised that in my three and half years of blogging, I have never featured a recipe for cauliflower on Souvlaki For The Soul!  Shock!  Horror!  It’s a vegetable I have not really experimented with much over the years.  It’s not that I don’t like it…I’m just “meh” about it.  My mother used to boil the living daylights out of it and then dress it in olive oil and lemon juice.  Have you ever tried overdone cauliflower?  It has the same textures as cooked brains!  It was only when I got older and has my first “real stir fry” that I noticed you could eat it slightly firm.  (the things you learn!)  I also don’t mind cauliflower when it’s spiced up a little and served the Indian way with potatoes in a dish known as “Aloo Gobi”.

Today I offer you no spice though.  The cauliflower I picked up at the markets had seen a few too many days in the fridge so I thought it was time to use it!  Also,  I don’t care how many sunny days we are having at the moment.  It’s still chilly and slightly windy in the evenings and this is where the “wonder food” soup comes in handy!  It might seem like cheating to use the cauliflower in a soup but it hits the spot I tell ya!  The cauliflower soup uses milk and a little cream to make it mellow.  I’ve also added some grated Parmigiano Reggiano just before serving to give it a nice bit of added “sharpness”.  Feel free to add a variety of spices to the following recipe.  I’m thinking nutmeg or even cumin would work well here.

CAULIFLOWER SOUP RECIPE

Adapted quite heavily from Rex Morgan’s recipe here

  • 1 medium sized cauliflower (or half a large one) with outer leaves removed
  • one small onion, diced
  • 2 cloves of garlic, crushed
  • 100 grams of butter
  • 250 mls of chicken stock or vegie stock or even water
  • milk-to cover
  • salt and pepper  to taste
  • A “splash” of cream-optional
  1. Cut the cauliflower into approx one inch florets
  2. Saute the onion and garlic in the butter until softened
  3. Add the florets and stir through the garlic/onion mixture for a few minutes
  4. Add the stock and enough milk to cover the florets
  5. Season with salt and pepper
  6. Bring the mixture to the boil and then let it simmer for 20-30 mins. (florets will be tender)
  7. Using a handy stick blender, whizz everything up until you have a nice smooth consistency
  8. Add a splash of cream to achieve a lovely, extra smooth, velvety texture
  9. Serve with a generous amount of grated Parmigiano Reggiano on top.

    OMG.. cauliflower glam shot!
    I’m definitely going to try this one… can I use a normal blender or will it get too pureed? I don’t think i’ve ever made a creamy soup before

    Gorgeous clicks, Peter. Cauliflower does go well with dairy. Even in China, my dad used to make me this milk and cauliflower stew that was delicious. This soup sounds just like the simple and comforting meal I’d look for on a chilly evening.

    I am a firm believer that everyone will enjoy different foods if they are prepared in a way they will enjoy. I would love cauliflower in a creamy, comforting soup this way so it is no longer a veggie to avoid:D

    Lovely photos (as usual) and the composition is great especially ont he last photo. My dream is to make cauliflower cheese – and I guess I will as soon as the sun start’s setting at 4pm :-) . If you’re ever looking for ‘cheap’ bits of wood for backgrounds, I’ve discovered that I can find some nice ones in Ikea’s castoff corner.

  12. Mmm, delicious Peter! I love cauliflower all ways like you – especially deep fried and also crumbed with polenta. Love the addition of cheese to this soup, I’m usually a sour cream girl ;)

    Cauliflower is one of our favorite veggies and we have it at least once a week. But a soup with it is yet to be. It is going to be one hearty bowl in winter.

    I had a blah relationship with cauliflowers as well. My mom used to stir-fry it all the time, and I don’t think I appreciated it that much then.

  15. Peter, thanks for the idea! I read your post this morning and knew I had some cauliflower lurking on the top shelf in the fridge. I looked in on it and found some broccoli that needed help, too, so made cauli/broc soup using your recipe. Also added some nutmeg (I love nutmeg in cream soups) and pecorino romano in place of the parm (no parm on hand right now). All four of us inhaled it, including our two-year-old and four-year-old. They walked to the local market with my hubby for some nice crusty multigrain bread to go with. A big hit!

    Cauliflower is one of those underrated vegetables Peter – and I am guilty of not featuring it as well – but I it’s a really wonderful vegetable – I remember having it as a puree in Quay many years ago – I couldn’t believe how silky smooth and delicious it was. Your post has awakened some delicious memories!

  21. my favourite way to eat cauliflower at the moment is to puree it in a blender. i guess it’s like a soup then. so tasty. with a bit of butter, milk, salt and pepper. goes wonderfully with lamb cutlets, fish and of course scallops :-)

    Hi Peter. This looks great. Always a favourite with me. Have you tried adding a pinch of cumin to this. It takes it up a notch and also help with what happens after you eat to much cauliflour :)

    Peter, I must admit that cauliflower is the one vegetable I really do not like at all. lol. That said, this soup does look tasty and with the pecorino, it must be! Maybe I will have to re-try cauliflower since I’ve had so much luck liking things I used to not like!

    Cauliflower has a bad reputation. You’ve just helped it along.This would go great with some toasted pine nuts (or other nut) thrown on top too.

    This is almost exactly how I prepare my cauliflower soup and I’m with you–I never used to like it. That changed when I learned to roast the florets then I was hooked! Your soup is beautiful!

  26. This soup looks great Peter. I am a huge fan of cauliflower – especially when roasted, which I bet would be another great way to prepare the veg for this soup! Now that we are going into soup season in this hemisphere, I can see this gracing my table soon!

    Looks great. I realize with all the vegetables I eat and the myriad number of times I prepared cauliflower, I’ve never had ‘cauliflower soup’. I have to try it when the weather cools off here — and I think you’re right, nutmeg and/or cumin would really work.

    Too funny about the brain comment – my Mum used to do exactly the same !Wonderful piccies Peter – I drizzle some truffle Oil over the top after serving as the earthy taste goes beautifully with the cauliflower. Its an interesting veggie isnt it!

    I may even be able to get it past the lips of a very reluctant 17 year old boy – who used to hide his unwanted veggies in his pockets until he got away from the table and could bin them!!

    Yep. No doubt about it. The old Cauli has a nasty past but there is so much you can do with it as I too am finding out. Your Cauliflower soup does look a treat, seeing I’ve decided to forgive the humble cauli for its evil past and venture into its subtle & versatile charms with enthusiasm & gusto – I do believe I’ll definatly add this dish to the list. Sounds yum :)

    Hello … first time to your space. Totally fascinated by your photography. Spent time looking through your travel pictures. They are truly amazing, Liked the acropolis ones with the eerie clouds. This kind of cauliflower soup is new to me. Interesting , will try as i am a huge fan of soups.

    just found your awes0me blog- i too have a Greek background and what do you say…us Greeks love food!
    thought id comment here as i made cauliflower soup last week – cauliflower was going cheap at my local grocers – i also added a lot of cheese in mine to entice my boys to eat but sadly no one really liked it so i ate soup for 2 days lunch and dinner – i didnt mind, love my soup!
    going to search you blog for lentil recipes – thats what i plan for tonight!

    I had an over supply of cauliflower from attending the local school fair so soup was the decision to use it up. Not sure how this receipe finished up being the one to try but I am glad it was. The soup was delish. From my 9 year old daughter to my 65 year old mother the response was the same. (I did mix it 50/50 with pumpkin soup for my 11 year old son to take it to school in a thermos, he loved it too). Thank you.

    I love cauliflower but my mom never really made the most out of it and was sort of in the same region with the overcooking. But instead of lemon my mom used a very bland white sauce which seems to be the typical thing here to serve with cauliflower. I love your idea of this soup!
    One of my favorite ways of eating cauliflower is in stirfry dishes. it just adds a lovely crunch!
