    Fattoush Salad with Hot Smoked Salmon

    My fattoush salad has the added ingredient of hot smoked salmon. It's the perfect summer fare.

    This is no ordinary fattoush salad.

    It's a conglomerate of crunchy goodness.

    Every bite screams fresh!

    I've taken liberty with the original Lebanese salad and added my little spin on it by adding "hot smoked" salmon.

    🥘 Ingredients

    Salad ingredients:

    • 2 pita bread
    • 1 capsicum, finely chopped
    • 250 g cherry tomatoes, cut in half
    • 2 cucumbers, Lebanese, sliced thinly
    • 4 radishes, small ones, thinly sliced
    • 4 spring onions, thinly sliced
    • 1 cup flat-leaf parsley, finely chopped
    • 1 cup mint, finely chopped
    • 250 g smoked salmon, "hot-smoked", broken into even pieces

    Salad dressing:

    • ¾ cup olive oil
    • juice of 1 lemon
    • 1-2 tablespoon molasses, pomegranate 
    • 1 teaspoon sumac
    • 1 pinch salt
    • 1 pinch pepper

    The "hot smoked" salmon pairs beautifully with the crisp veggies and baked homemade pita bread.

    The dressing containing exotic, sweet pomegranate molasses and lemony sumac, is the perfect accompaniment to this creation.

    🔪 Instructions

    • Preheat your oven to 190 deg C and line a baking tray with baking paper.
    • Brush a little olive oil over the pita bread, place on a baking tray and cook for 5-8 mins until the pita bread is crisp. Remove and allow to cool.
    • Add the capsicum, cherry tomatoes, cucumbers, radishes, spring onions, herbs and salmon to a large bowl. Crush the cooled pita bread with your hands and add to the salad ingredients.
    • Whisk the dressing ingredients in a large jug and pour over the salad, toss and serve immediately.

    As you can see. It's quite easy to put this fattoush salad together.

    There is a little chopping involved but in the end it comes together quite easy!

    💭 Top tips

    Let's talk about the salmon for a moment.

    It shouldn't be confused with the "regular" smoked salmon. While smoked salmon is delicious in its own right - the salmon used in today's recipe is "hot smoked" salmon.

    It's been slow cooked over a longer period. It's flaky -yet "meaty" at the same time.

    Ingredients
      

    FOR THE SALAD:
